Cups are US cups (240 ml), spooned and levelled. Weights are for the edible part unless noted.

Good to know

  • Weigh when you can. A scale is more accurate than cups, especially for flour, nuts and chopped herbs.
  • Roll a lemon or lime on the counter and warm it briefly: it gives more juice. Zest it before you juice it.
  • Onions, garlic and herbs vary a lot in size. Treat the figures as a guide and taste as you cook.
  • Eggs in this guide are US large. European large eggs weigh about 63 g in the shell.
