Good to know
- Active dry yeast is best dissolved in warm water (about 35–40 °C) for 5–10 minutes. Instant yeast can go straight into the flour.
- Fresh yeast is perishable: keep it in the fridge and use it within about two weeks, or freeze it in small pieces.
- A longer, cooler rise needs less yeast and develops more flavor. Judge by the dough, not the clock: it should be about doubled and puffy.
- Very sweet or rich doughs rise more slowly, so do not cut the yeast too far.
